Spicy Sea Bass (Baked) Recipe

Prepare one whole Black Sea Bass, by cutting off fins, spine and tail.  Scale the fish, remove the guts and gills. Rinse in cold water, pat dry.

1. Cut Slits on both sides of the fish so that flavor can go into meat easily

We like to insert sliced pieces of fresh ginger into the cuts

2. Rub salt, pepper, cumin on both sides, including the cuts areas, pour some cooking wine on it, marinated for 30 mins.

3. Add ginger slice to the cuts and inside the fish belly

4. Then add some oil on both side too. Then Bake at 425 for 30mins, you can flip it if you want.

5. Prepare the soup/sauce: heat oil, fine chopped ginger, scallion, garlic, stir fry at medium temperature

6. Add spicy bean paste (you can get it from hmart or Chinese market), stir fry

7. Add chicken broth, then add some tomatoes, leave on low fire for like 10 mins

8. Thicken the broth a little bit, by adding some corn starch

9. Pour the broth to the fish, then continue baking for another 10 mins

10. You can add some scallion and cilantro or some roasted peanuts at the end
